Easy to bake muffins
Healthy chocolate chip muffins that are so easy to make you don’t even need a hand blender. Making this the only muffin recipe you need in my opinion.
Bonus they are actually delicious and the entire family is FINALLY in agreement about this. I am posting this recipe here because when I mentioned these muffins on my Instagram stories, my phone almost blew up. Had I known muffins were such a hot topic I would’ve started a muffin blog (not really because this is the only recipe I have to share).
The snack life is real :

I have been on a quest for the perfect healthy muffin recipe for close to 4 years now. I feel like goldilocks in the 3 bears: too salty, too dense, too sweet and now I present a muffin that is just right!
Please keep in mind that I am not a nutritionist and you might feel that these muffins can be made with better ingredients. If this recipe is not considered healthy enough for you I will not take offence. Also please feel free to share your tweaks I am always happy to learn about new healthier alternatives.
Directions:
Preheat your oven to 400 degrees(f) , line a 12 cup muffin tin.
In a bowl whisk together the wet ingredients.
In a second bowl sift together the dry ingredients. Once the dry ingredients combined mix them into the wet ingredients.
Spoon mixture into muffin cups – makes exactly 12
Wet ingredients :
- 3 ripe bananas (mash them)
- ¼ cup honey
- ¼ cup organic maple syrup
- 3 eggs
- ¾ cups full fat plain Greek yoghurt
- ¼ cup coconut oil (melted)
- 1 teaspoon vanilla extract
Dry ingredients:
- 2 cups whole wheat flour
- 3 teaspoons baking powder
- 4 tablespoons coconut sugar
- ½ teaspoon salt
OPTIONAL INGREDIENT – I mixed 1/3 cup of chocolate chips into my muffins. This is because I am dealing with the worlds pickiest eaters and I have no choice but to add a few choc chips.
Bake for 18 – 20 minutes.
The Verdict:
Happy to report that this is the muffin recipe hit all the right spots and everyone is snacking away ! I will be filing this one under the only muffin recipe I need for any future baking I do.
